Dill and Smoked Salmon Omelette

Serves 2, 10 minutes

Omelettes are one of life’s go to meals. Perfect for breakfast, lunch or dinner. Here we have combined a classic combination of fragrant dill with smoked salmon, and added richness with cream cheese.

Have it as it comes for a weekend breakfast, add some salad if having for lunch, or some sweet potato wedges if it is your evening meal.

Omelette 1

Ingredients:

  • 6 eggs

  • 25g dill

  • 25g parsley

  • 100g cream cheese

  • 100g smoked salmon slices

  • Salt and pepper to season

  • 10g unsalted butter

Method:

  1. In a jug beat the six eggs until the yolk and white are mixed.

  2. Finely chop the dill and parsley and then add to the egg mix.

  3. Next, add the cream cheese and mix through the egg. Stir to combine.

  4. Put the butter in a saucepan (ours has a 25cm diameter) on a medium heat. Let the butter melt, and start to foam. This browning of the butter will add a richness to the omelette.

  5. Add the egg mix to the pan and cook on a medium to low heat for around three minutes. You are looking for the bottom to be golden brown, with the top off the egg set.

  6. Remove from the heat and place the smoked salmon on one side of the omelette.

  7. Fold over and serve. Here we served ours with some watercress and kimchi.
